Mix the vegetables with salt like you normally do. Cover with a tea towel. Go off and do another chore. Come back after an hour or two and mix again. The cabbage will be as if you’ve done all the massaging, squeezing and pounding and be ready for your storage containers.

And now today I find your easy to follow instructions with pictures – you have inspired me to get started.
I love your conversation with the arrowroot in your garden. It reminds me of the powerful harmony that eternally exists in nature that is so easily overlooked with the ‘science’ of gardening. Now to find some jars with lids that fit and get into home-made sauerkraut making!
