	<div class="tve-page-section-in tve_empty_dropzone" data-css="tve-u-67cb966b0123f8" style=""><div class="thrv_wrapper thrv-columns" style="--tcb-col-el-width: 1080;" data-css="tve-u-67cb966b0124b8"><div class="tcb-flex-row v-2 tcb-resized tcb--cols--2" style="" data-css="tve-u-67cb966b0124d7"><div class="tcb-flex-col" data-css="tve-u-195734a74aa" style=""><div class="tcb-col"><div class="thrv_wrapper thrv_text_element"><p>For more than a decade I've been rendering fat into tallow (from cattle) and lard (from pigs) for cooking, soap-making, and occasional skin care recipes.</p><p>Over the years I've tried every method, made every mistake, and complicated the process (completely unnecessarily) in every imaginable way. Also a few unimaginable ways. I've certainly made as much mess in the kitchen as it's possible to make while rendering fat.</p><p>In this post, I'll share the steps I've finally arrived at that are simple, efficient, and relatively mess free, for producing clean rendered fat with little to no odor, every time.&nbsp;</p><p>In this post I'll be focusing on tallow, but this is the same process I use for lard and it would work for other kinds of fat too.</p><p>I'll be referring to tallow for <a href="https://arealgreenlife.com/farm-shop/#tallow-soap" class="" style="outline: none;">soap making since this is the main use I put it to</a>, but tallow can also be used for cooking, candle making, skin care products, and leather care products, to name the uses I'm aware of.&nbsp;</p></div><div class="thrv_wrapper thrv_text_element"><h2 id="t-1742008034238" class="">What is tallow (or suet, as its called before rendering)?&nbsp;</h2><p>Tallow starts out as a special fat called suet, that is found around the kidneys of cattle. It's not the same as the fat in the muscle meats, like you find on your steak.</p><p>Sheep, deer, and goats also yield suet, but I'm sticking to cattle because that's what we raise<span id='easy-footnote-1-24486' class='easy-footnote-margin-adjust'></span><span class='easy-footnote'><a href='https://arealgreenlife.com/how-to-render-tallow/#easy-footnote-bottom-1-24486' title='We use suet from our own cattle, a resource that would otherwise go to waste. Read about our &lt;a href=&quot;https://arealgreenlife.com/happy-meat/&quot; class=&quot;&quot; style=&quot;outline: none;&quot;&gt;philosophy of caring for our animals here&lt;/a&gt;.'><sup>1</sup></a></span> and that's the fat I use for soap making.</p><p>When you render suet, it turns into "tallow," a hard, clean smelling fat, creamy white to pale yellow in colour, that keeps well and has a multitude of uses.&nbsp;</p><p>Tallow is very similar to our skin’s natural oils, or sebum -- so much so that in Latin, a translation for "tallow" is "sebum." Tallow soap is gentle and non-irritating, and won't disturb your skin's microbiome.</p><h2 id="t-1742008034241" class="">Where to get suet if you don't raise your own cattle?</h2><p data-end="368" data-start="0">In my opinion, the best option is to form a relationship with an ethical, local farmer, butcher, or hunter, and ask to buy kidney fat from them.</p><p data-end="368" data-start="0">Animal fat can be ethically sourced from wild animals or animals raised in regenerative ways that have lived satisfying, healthy lives, or it can come from factory-farmed, grain-fed animals in industrial systems that are detrimental to health at every level.&nbsp;</p><p data-end="368" data-start="0">By forming a direction in-person relationship with whomever you get your tallow from, as well as getting a better product you're also insisting on a little more wholeness and connection in the world.&nbsp;</p><h2 data-end="718" data-start="370" id="t-1742008034242" class="">How to choose the best suet&nbsp;</h2><p><strong>Ask for "kidney fat," or "suet" -- not just "fat."</strong> You don't want general fat trimmings.</p><p><strong>Choose suet from grass fed animals if you can</strong>. It's firmer, whiter, and less greasy than grain-fed, and will render into a harder tallow which is better for soap making.&nbsp;</p><p><strong>Make sure its fresh.</strong> Fresh suet should be pale yellow and feel hard and crumbly to the touch. If it's grayish, slimy, or has a strong odor, it's too old and has started to spoil.<br></p><p>Suet has a thin, crackly membrane interwoven throughout. Don't worry about this -- it will render out (I'll tell you all about that, below).&nbsp;</p><p>Once you have your suet, bring it home and either render or freeze it immediately. It freezes well for many months, but it does not keep well in the fridge.&nbsp;</p><h2 id="t-1742008034243" class="">Preparing the suet before starting the rendering process</h2><p><strong>Ask the butcher to chop the suet into chunks</strong>, the smaller the better. This isn't essential but it will make life easier for you and speed up the rendering process. The butcher may increase the price if you ask for it to be finely chopped (I would, if it were me).&nbsp;</p><p><strong>But, avoid pre-ground suet.</strong> Pre-ground is convenient, but it's likely to go rancid faster.&nbsp;</p><p data-end="368" data-start="0">If the butcher didn't want to chop the suet finely or you didn't want to pay for that extra step, you'll have large, unwieldy chunks of hard fat. Not fun to chop yourself.</p><p data-css="tve-u-195786e3976" data-end="368" data-start="0">You'll have three options:&nbsp;</p><ol class=""><li data-end="368" data-start="0">chop it yourself before starting the rendering process,&nbsp;</li><li data-end="368" data-start="0">rope someone else into chopping it,</li><li data-end="368" data-start="0">chop it just enough that the chunks will go into the rendering container and then deal with them once they've softened (more on this below).</li></ol><p data-end="368" data-start="0">Option 1 is my least favorite. Option 2 works really well (the first few times, until your chopping person gets tired of it). Option 3 is probably the best one, all things considered.&nbsp;</p><h2 data-end="1199" data-start="1173" id="t-1742008034244" class="">How to render suet (which turns it into tallow)</h2><p>The quality and shelf life of your tallow and whatever you end up making with it depends on thorough rendering, so its worth doing this step well.</p><p>Take heart -- it's not complicated and it's not even particularly time consuming, once you know the process well.&nbsp;</p><p>I use a "wet-rendering" method, because that's what works for me to produce clean tallow with little or no odor.</p><p>In short, wet-rendering means putting the fat into a slow cooker or a pot on the stove top with water and salt, melting it, then chilling it. <br></p><p data-end="115" data-start="0">The salt helps draw out impurities and neutralize odors in the fat. The melted fat rises to the surface; the salty water and the impurities sink to the bottom. Once chilled, separating them is very simple.&nbsp;</p><p>If you're just planning on cooking with your tallow, this is all that's required. If you want to make anything with it you'll need to repeat the process 2 or three times.&nbsp;</p><p>Here's the step by step, with pics...&nbsp;</p><h2 class="" id="t-1742190362165">Step by step, in pictures&nbsp;</h2><p><strong>Step 1 - roughly chopped fat goes into a cooking container with hot water and salt. </strong></p><p>Quantities aren't important here. My approach is to pack the slow cooker with as much fat as it will hold with the lid on, sprinkle on a hand full of salt, and pour in up to half a liter of water.</p><p>But I know when you're starting out its comforting to have measurements to follow, so here's a starting point: for approximately 1.5 to 2 kg of fat, use up to a liter of water and approximately 1/4 cup of salt.&nbsp;</p><p>The water can be hot if you like, which speeds things up ever so slightly. This (below) is what it looks like the next morning. The tweezers are for removing the bits of connective tissue that get tangled around the blades of the stick blender, which you can see lying on the plate. Pour it into a bowl -- I like glass so I can see what's in there. Straining it is unnecessarily messy and time consuming -- just pour the whole lot in, let it sit on the counter top till its cooled enough to put in the fridge, then chill overnight.&nbsp;</p><p data-css="tve-u-19637c00268" style="">(<strong>WARNING: If you pour hot fat into glass, place the glass bowl or jar in the sink </strong>so that if the unthinkable happens and it breaks, you won't Your options now are to store it or use it. If I wanted to make soap immediately I would cut this block of fat up, weigh out what I need, and get started.&nbsp;</p><p data-css="tve-u-19637d3f881" style="">If you want to store it in glass, you can remelt it one last time then pour it into your jars. <strong>(I repeat: put the glass jars in the sink before pouring into them.)</strong></p><p data-css="tve-u-19637d3f881" style="">For freezer storage I find that plastic is better than glass. (Plastic stacks better and glass tends to crack when the fat expands.) But I don't like pouring hot fat into plastic containers, lest my soap end up with a credit card worth of fat in it. </div><div class="thrv_wrapper thrv_text_element" data-css="tve-u-66b9b9cacda977"><p>Our ancestors were using wild edible plants (weeds) for food and medicine tens of thousands of years before we began to domesticate the plants found in supermarkets today. Yes, many of the same weeds we see around us now have been accompanying us all that time.</p><p>We've developed domesticated plants for sweetness, appearance, volume, and keeping ability, and in the process we've bred all the vigour and tenacity out of them. Wild edibles, in contrast, are still wild and complex and full of real nutrition -- vitamins, minerals, and healing compounds that our bodies can easily absorb and that no supermarket shelf or bottle of pills can ever provide -- and weeds are free!</p><p>This post lists some edible weeds that you're likely very familiar with<span id='easy-footnote-2-22892' class='easy-footnote-margin-adjust'></span><span class='easy-footnote'><a href='https://arealgreenlife.com/weeds-nutrition-and-medicine/#easy-footnote-bottom-2-22892' title='In my home area of the Atherton Tablelands, Far North Queensland, but most of these weeds also grow prolifically in many, many other parts of the world.'><sup>2</sup></a></span> and some of their uses as food and medicine. It's intended as a prompt to get to know the weeds around you, but not as advice or instruction.</p><p>Please take full responsibility for being certain about the identity and uses of any plant you forage. Unless you are learning in person from someone who is eating the plant in question (or using it as medicine), always, <em>always</em> check the scientific name (the long fancy name usually in brackets and italics) because common names are confusing and unreliable.</p><p>Look at images of weeds on the internet, read herbal books, or best of all find local guides who can teach you in person -- and help yourself to the wild abundance that is all around us when we know how to recognise it.</p><p>When you harvest, remember to pause for a moment and silently or out loud give thanks to the wild plants and to the land, air, and water that nourishes them so that they in turn can nourish you.</p></div><div class="thrv_wrapper tve_image_caption" data-css="tve-u-1923caa943f" style="" id="dandelion"><span class="tve_image_frame"><img decoding="async" class="tve_image wp-image-23195" alt="Dandelion leaves, flowers, and seed head. In recorded history, dandelions are known to have been used by ancient Egyptians, Greeks and Romans, in traditional Chinese medicine, and by Native Americans.</p><p>Every part of the dandelion plant is edible and and safely medicinal, incredibly rich in a wide range of minerals, vitamins, and health supporting constituents. Even the bitter taste of dandelion leaves <a href="https://arealgreenlife.com/bitter-taste-health-benefits/" class="" style="outline: none;">offers a cascade of health benefits.&nbsp;</a></p><p>Eat young dandelion leaves and flowers in salads; add older leaves to any cooked dish that calls for leafy greens. They're less bitter before the plant flowers. Prepare the roots like any root vegetable.</p><p>Cover a handful of dandelion flowers with boiling water, add honey (optional) and enjoy. (Regular use may help with headaches, menstrual cramps, backaches, stomach aches, and feelings of depression.)</p><p>On your way home from work, collect a handful of dandelion leaves. Chop and cover them with your choice of wine or boiling water. The next image shows mature broad leafed plantain with the distinctive seed heads, which look the same for both.&nbsp;</p><p>Note that in both varieties, the veins run parallel in the leaf, rather than branching. This is a reliable way to identify plantain. <br></p><p>Eat the leaves in salads, steamed, in dips, soups, quiche, or pesto. The immature flower stalks are edible, either raw or steamed, and so are the small seeds.</p><p>Fresh plantain leaves can be crushed and applied to wounds, sores, insect bites, stings, eczema, and sunburn to stop bleeding and relieve pain or itching.</p><p>To make a fresh plantain spit poultice: pick a leaf, chew it well and apply as needed. <em>(Stellaria media)</em> has been used by people as an edible and medicinal plant since at least the Middle Ages. It's originally native to Eurasia and has now naturalized throughout the world as a weed of waste ground, farmland and gardens. It likes shaded, moist conditions.</p><p>You can eat the leaves, stems, and flowers of chickweed, but not the roots. <em>(Bindens pilosa)&nbsp;</em>-- a pain in the butt, right, to have to pick them out of your clothes? Perhaps the more a plant persists in following us around, the more likely it has something to offer us.</p><p>Cobblers pegs are originally native to the Americas but are now widely distributed around the world. They're a weed of gardens, parks, crops, pastures, roadsides, disturbed sites, waste areas, waterways, and the exposed margins of bushland and forest. They're regarded as an environmental weed in New South Wales and Queensland. <br></p><p>The leaves of cobblers pegs are edible -- eat them raw in small quantities, add them freely to cooked dishes, dry them and make tea. They're a good source of chlorophyll, vitamin C, calcium, iron, potassium, and magnesium. Once you've looked at lots of amaranth pictures and started to pick them out in your environment, you'll see the similarities that they all have -- it just takes a bit of practice. All are edible, but watch out for the spiky ones!&nbsp;</p><p>The image at the top of this post is an amaranth flower stalk; the image above is of amaranth in our garden.&nbsp;</p><p>Throughout the spring and summer months I add amaranth leaves and stem tips including the flowers/seed heads to any cooked dish calling for leafy greens. Young amaranth seedlings may come up thickly enough to harvest by the handful -- chop and then lightly steam or stir-fry.</p><p>Do cook your amaranth -- it's high in oxalic acid which you don't want to be ingesting lots of; cooking reduces it substantially.</p><p>And yes -- the amaranth "grain" (it's actually a seed) in fancy packets in the health food store --comes from these same plants. But in the last few hundred years as modern food has become more and more industrialized and processed, the bitter taste (along with tart and astringent, two other possible taste markers for wild and wildly nutritious plant foods) has dwindled away. Sweet tasting foods appeal to us; bitter tasting foods initially repel us.</p><p><a href="https://theconversation.com/a-taste-for-sweet-an-anthropologist-explains-the-evolutionary-origins-of-why-youre-programmed-to-love-sugar-173197" target="_blank" class="" style="outline: none;">Research suggests</a> that this might be because getting enough calories was a very high priority for our ancestors, and sweetness indicates that a food is high in calories. On the other hand the bitter taste can signal the presence of toxins -- so when we encounter it unexpectedly, we pucker and spit.</p><p>Since some bitter tasting things are poisonous and others (think dandelion leaves or brussel sprouts) are very nutritious, a taste for bitter is something we have to learn from our elders; we're not born with it. (Which is probably why it takes so much persistence to teach children to eat their greens.) But humans of all ages know instinctively that sweet-tasting foods are good to eat.</p><p>(Well. Let me re-phrase what I just said, because "sweet tasting" is a relative term. All the foods we formerly perceived to be sweet were good for humans to eat before we suddenly, in only the last few generations, gained easy access to cheap, nutrient-deficient, excessively sweet foods. In fact sugar, in the pure forms we now encounter it in, is an addictive stimulant and as such, the more of it we eat the more we need to eat to get the same "hit." But I'm stopping before I go down <em>that </em>rabbit hole or we'll be here for two more weeks before I can publish this post.)<br></p><p>Back to bitter versus sweet, and why you will not find the bitter taste on supermarket shelves. The bitter taste makes people pucker their faces and pause; the sweet taste prompts people to eat more, mindlessly, past the point of fullness. </div><div class="thrv_wrapper thrv_text_element"><p>In his essay, <a href="https://herbcraft.org/bitters.html" target="_blank" class="" style="outline: none;">"Blessed Bitters,"</a> (from which the above quote comes) Jim McDonald describes at length how regularly eating bitter foods and herbs can help with digestive issues, type 2 diabetes, cravings, addictions, mood disorders, and more, and can help promote groundedness and present-moment awareness.</p></div><div class="thrv_wrapper thrv_text_element"><h2 class="" id="t-1710742853125">What happens in your body when you eat something bitter?</h2><p>When we encounter the bitter taste, first the tongue wakes up and then so does the rest of the body. Bitter taste receptors on our tongues trigger a cascade of bodily responses called the 'bitter reflex,' to optimize digestion and to cope with potential toxins.&nbsp;</p><p>To summarize an extremely complex process, bitter tasting foods prompt our salivary glands, stomach, pancreas, and liver to produce stomach acid, bile, and enzymes to augment digestion and nutrient assimilation. And then all along the digestive tract, more bitter taste receptors stimulate the secretion of hormones that make us feel full and satisfied.</p><p>So when the food we eat includes the bitter taste, we eat less, we digest better, we absorb more nutrients, and we're somewhat protected from food poisoning.</p><p>But there’s more. Eating something bitter at the start of a meal can also augment healthy digestion by calming the nerves and slowing the heart rate, which contributes to a sense of calmness and well-being.</p><p>Bitter taste receptors have been found almost everywhere in our bodies, sensing bacteria, regulating immunity, flushing out potentially harmful molecules, and regulating smooth muscle tone.</p><p>That's a surprising array of health benefits to get from something as simple and easy as, say, munching on three dandelion leaves in the garden before dinner. Or making sure you include bitter tasting greens and vegetables in as many of your meals as you can.</p><p>I believe somebody somewhere said something to the effect that we could "let food be our medicine." Yes, they will be very bitter (and make sure they haven't been sprayed and no dogs have been marking territory near by).</p><p>For salad eaters, there are many bitter salad greens to choose from (for example, rocket, kale, watercress, nasturtium, and you can add dandelion greens to salads, too). Start with mostly bland leaves like domesticated lettuce and add just a few bitter leaves, then gradually adjust the ratio as your taste for older, wilder food grows.<br></p></div><div class="thrv_wrapper thrv_text_element" id="salad_dressing"><h3 class="">A salad dressing to complement bitter greens,&nbsp;</h3><p data-css="tve-u-18e58c47559">start by half filling a jar with good quality olive oil. Then add judicious amounts of:</p><ul class=""><li data-css="tve-u-18e7204c7fc">soy sauce or salt</li><li data-css="tve-u-18e7204c7fc">raw apple cider vinegar</li><li data-css="tve-u-18e7204c7fc">mustard (optional)</li><li data-css="tve-u-18e7204c7fc">grated ginger, garlic, or turmeric, chopped fennel leaves or seeds, or tarragon (all optional)</li><li data-css="tve-u-18e7204c7fc">honey (optional, and you might want to train yourself to reduce it over time)</li></ul><p class="data-css=" tve-u-18e7204c7fc""="">Shake, taste, adjust. Douse your salad and toss it well, give it a few minutes for the oil and vinegar in the dressing to start pre-digesting your greens for you, then enjoy.</p><h3 class="data-css=" tve-u-18e7204c7fc""="">Cooking bitter vegetables<br></h3><p class="data-css=" tve-u-18e7204c7fc""="">If you're a cooked veg person, most members of the brassica family (especially brussel sprouts, radish, swede, and turnip) provide a degree of bitterness.</p><p>Sweet potato leaves are another highly nutritious, bitter-tasting edible green vegetable.&nbsp;</p><p>Be sure to cook/serve your greens and veggies with a healthy fat (such as butter, coconut oil, olive oil, or lard) to support your body in absorbing fat soluble vitamins and minerals.</p><p class="data-css=" tve-u-18e7204c7fc""="">Vinegar is also a good addition to any bitter vegetable -- it helps cut the bitter taste, augments our digestive juices, and acts as a solvent to make minerals more available to us. <br><br></p></div><div class="thrv_wrapper thrv_text_element"><p style="text-align: center;">****</p><p>In this post I've talked mostly about greens and veggies, but some fruits are bitter too, or tart. I'll finish this post with a little fruit anecdote...</p><h2 class="" id="t-1711307898772">Modern, domesticated food plants? Or old wild ones?</h2><p>Recently our family brought home apples from the supermarket (what in the world was I thinking!?).&nbsp;</p><p>They had little stickers with codes on them, so I got the smart phone, scanned, tapped... and was treated to a video showing huge fruit tree monocultures, a tractor driving along the rows spraying something on the trees, and spotless, gleaming processing facilities. A calming, well-modulated voice assured me that "we use the best of modern technology to produce food that's good for you."</p><p data-css="tve-u-18e5ab67b51">Hmmnn. Note to self. Go back to buying the smaller and very expensive organic apples. Or better yet, search out older, wilder fruits that can't found in the supermarket. Ones that taste tart or bitter and go mushy quickly, rather than tasting smooth and sweet and staying firm for an unnaturally long time.</p></div><div class="thrv_wrapper thrv_contentbox_shortcode thrv-content-box tve-elem-default-pad" data-css="tve-u-18e58d0d133" style="">

We had no idea where our food was coming from and we were powerless to take care of our own basic health needs or to do anything about rising food and fuel prices.&nbsp;</p><p>Today we eat in ways that are much healthier and more economical both for us <em>and</em> for the places and communities our food comes from. And if extreme weather were to cut off our family's access to town, we'd be able to go for many weeks (barring serious accidents) without needing the supermarket or the pharmacy.</p><p>A big reason for all of that (besides our efforts over the years to learn to grow lots of our own food and to use simple, natural remedies to take care of our health) is that we've learned to reject convenience foods and replace them with carefully selected and prepared whole foods, which is the topic of this post.&nbsp;</p><h2 class="" id="t-1674938156377">What would be helpful?<br></h2><p>Before we go on: this post is in the nature of an overview, with some hints and tips thrown in. You get to eat them right out of the packet or with very minimal preparation. But convenience foods also cut you off from nature, from the sources of your food, and give you:</p><ul class=""><li>less nutrition,</li><li>more additives,</li><li>more packaging,</li><li>higher cost per meal,</li><li>less empowerment (convenience foods are habit forming in two ways: 1, their ingredients interfere with your body’s innate intelligence about what is good for it, and 2, you come to rely on them as a quick fix ),</li><li>gradually declining health and energy levels, and</li><li>the nagging awareness that you’re buying from giant conglomerates that are squeezing the life out of farming communities, and the biodiversity out of ecosystems, around the Earth.<br></li></ul><p>In the long run you're paying for that cheap convenience with your health and well-being, not to mention what industrially produced and processed foods do to our ecosystems and communities.&nbsp;</p><p>When you buy whole foods, you do have to prepare them yourself. There’s no getting around the fact that in order for you to eat nourishing food that doesn’t cost the Earth, some planning and organization is required on your part.</p><p>But that's really the only downside, and I've found that it's at least as much about planning and organizing as it is about spending more time in the kitchen. </p><p>And in my opinion, it’s worth it. When you do put in the effort to buy more whole foods and learn to use them, you’ll get:</p><ul class=""><li>better nutrition (so much so that its impossible to state the difference in one small bullet point)<br></li><li>gradual restoration of your body’s innate intelligence about what you <em>need</em>, vs what the food industry wants you to <em>want</em></li><li>a feeling of empowerment: as you learn to use whole foods you'll also be learning to be more in charge of your own eating habits, enjoyment, and health, and less reliant on anonymous giants who have no interest in your health</li><li>a sense of satisfaction in knowing you’re taking better care of the Earth just by how you eat</li><li>a sense of re-connection, perhaps even of home-coming, as you engage with your food closer to its source<br></li><li>positive knock-on effects in other areas of your life as all these things begin to strengthen you in subtle ways</li></ul><h2 class="" id="t-1674938156375">A whole food example<br></h2><p>Here’s an example from my life of buying a whole food and using it in ways that help me feed my family well without spending my entire life in the kitchen.</p><p>I buy organic brown rice and cook 1 to 2 kg of it at a time.&nbsp;</p><p>Whole grains are more nutritious than processed ones, but they can be problematic to digest and get the full nutritional benefit from unless we know how to prepare them properly. So I have a preparation and cooking process for brown rice that involves a few steps and some forethought and planning. <br></p><p>The process requires my presence in the kitchen, but not a huge amount of hands-on time; I can be doing other things while the rice is doing its thing.&nbsp;</p><p>The result is cooked rice that’s highly digestible and nutritious, keeps well in the coldest part of the fridge, and can be used in different ways as a base or a side in a variety of meals. </p><p>I don't bother freezing it (in fact I'm not sure what freezing would do to its texture); in nearly 15 years of doing this I've never had my cooked rice go off before I could use it all up in my family of four.&nbsp;</p></div><div class="thrv_wrapper tve_image_caption" data-css="tve-u-18603ce7700" style=""><span class="tve_image_frame"><img decoding="async" class="tve_image tcb-moved-image wp-image-19028" alt="Whole foods example - cooked rice" data-id="19028" data-init-width="1920" data-init-height="1282" title="Whole foods - rice by MYCCF at Pixabay" loading="lazy" src="https://arealgreenlife.com/wp-content/uploads/rice-by-MYCCF-at-Pixabay_1920.jpg" data-width="500" style="" data-css="tve-u-18603ceadb7" width="500" height="1282"></span></div><div class="thrv_wrapper thrv_text_element"><h2 class="" id="t-1674938156376" style="" data-css="tve-u-1860417d348">A few other ideas</h2><h3 class="" id="t-1674938156378" style="" data-css="tve-u-1860417f8f0">Legumes<br></h3><p>Legumes/pulses (such as dried beans or lentils) are relatively economical to buy. </p><p>(Unfortunately, pulses/legumes are among the crops routinely sprayed with glyphosate--Round Up--to desiccate them before harvest so it’s important to get them organic if you can manage it. The increased cost of organic pulses brings us closer to what real food <em>really </em>costs<em>&nbsp;</em>when farmers reject the industrial cheap food model and insist on something healthier. And on the upside, dried legumes do keep – so once you're comfortable using them you can consider buying organic in bulk for a better price. Best of all, if you live in parts of the world that grow them, buy your legumes directly from a farmer and cut out the industrial supply chain altogether.)<br><br>Like whole grains, it’s important to learn how to prepare legumes before cooking to increase their digestibility. Once you have the hang of it, legume preparation fits in with other kitchen routines and the pay-off in improved nutrition is well-worth it. Left-overs from bulk cook-ups of legumes can be refrigerated, frozen, and used in a myriad of ways in subsequent meals. Wisely prepared and combined with other whole foods, legumes can be a simple and nutritious whole-food staple in your kitchen. &nbsp;<br><br>There’s even a recipe for chocolate brownies that uses cooked dry beans in place of flour. Search the internet for “recipe for black bean brownies” and you’ll find a plethora of options. (I credit Katie at <a href="https://www.kitchenstewardship.com/" target="_blank">KitchenStewardship.com</a> for first introducing me to this idea, and she’s an excellent resource for all things whole food, real food, and healthy eating.)</p><h3 class="" id="t-1674938156379" style="" data-css="tve-u-186041842f1">Cooking in bulk for frozen meals<br></h3><p>When you go to the effort of cooking any meal that can be frozen, cook much larger amounts and freeze some for easy, home cooked “convenience meals” on other days.</p><h3 class="" id="t-1674938156380" style="" data-css="tve-u-18604184f61">Cooking veggies in bulk<br></h3><p>When you cook any kind of veggie, Its almost always worth doing double or triple, or as much as you can fit in whatever cooking vessel you're using.</p><p>The excess can go into bubble and squeak, frittata, be reheated under the grill and served topped with grilled cheese, or be quickly reheated in a fry pan and served with fried eggs on top or scrambled eggs mixed in. </p><p>Having already-cooked veggies at hand makes it easier to increase your veggie consumption, something most of us could do with, and it's hard to go past the all-around nutrition of a pan of fried garden greens and homegrown eggs. </p><p>(It’s really ok, even beneficial, to cook and reheat your veggies, including greens. Read more <a href="http://www.susunweed.com/herbal_ezine/april04/healingwise.htm" target="_blank" class="" style="outline: none;">here</a> about cooked vs raw.)</p><h3 class="" id="t-1674938156381" style="" data-css="tve-u-1860418ca76">Teaming up with a friend<br></h3><p>Team up with a friend, cook in bulk, and swap portions. You and your kids will appreciate the variety, and you’ll get ideas to expand your own repertoire.</p><h2 class="" id="t-1674938156382">Take action&nbsp;</h2><p style="" data-css="tve-u-185faf25832"><strong>If you’re not already practiced&nbsp;</strong>at bypassing processed foods, here are some action steps for you to try...&nbsp;</p><ul class=""><li>Sit down with a cup of tea, your notebook, and Google (or preferably <a href="https://www.ecosia.org/" target="_blank" class="" style="outline: none;">Ecosia.org</a> rather than Google).&nbsp;</li><li>Choose just one type of whole food that appeals to you, to work with initially. If you need to, look up the basics for how to store and prepare that food. Scribble down 2 or 3 meals in which you could use that food as a main ingredient over the coming week, or whatever time frame makes sense for you.&nbsp;</li><li>Put that food item on your shopping list. Then prepare it in a basic way and in sufficient quantity for the 2 or 3 meals you listed. (Don’t buy it in large bulk quantities yet, and don't cook any one meal in bulk for freezing until you're confident your family will eat it happily - The last thing you want is a freezer full of meals your family won't eat.)</li><li>&nbsp;Pat yourself on the back. You’ve just prepared the foundation for several meals and taken a step away from reliance on convenience foods.</li></ul><p style="" data-css="tve-u-185fafd8423"><strong>If you are already practiced at bypassing processed foods:</strong></p><ul class=""><li>Take stock of your meal planning as it relates to your supermarket habits: Are you already doing all you can to streamline your processes? Are you as efficient as you can be? Are there any areas where you could work smarter instead of harder? &nbsp;What about nutrition, are there areas where a little more attention to detail might yeild a boost in nutrition? <br></li><li>Pick an area (just one!) where you know you can do better, and note down what action you want to take.</li></ul><h2 style="" class="" id="t-1674938156383">You're not trying to be super-human<br></h2><p data-css="tve-u-185fafda48f" style="">Remember, no matter where you are on this journey, you're not trying to be super-woman or super-man. The objective is just to live a life that feels as right to you as can be.</p><p data-css="tve-u-1860163973e" style="">In the context of your current circumstances, and with the goal being health for your family <em>and</em> for the ecosystems and farming communities that feed you, what could feel a little more “right” for you?&nbsp;</p><p>Start there. <br><br></p></div></div>

	<div class="tve-cb"><div class="thrv_wrapper thrv_text_element"><h2 class="" id="t-1662324643343" style="" data-css="tve-u-1830ac5a468">Turmeric - an easy to grow super-food<br></h2><p>Turmeric grows so easily in the tropics and subtropics, and has an insanely long list of health benefits. That has led to a plethora of information on the internet, mostly aimed at selling turmeric in one form or another. And, I'm sure, all well-intentioned. <br></p><p>The good news is that if you grow even a little of your own food, live in the tropics or subtropics or can dedicate some sheltered space to it, turmeric is incredibly easy to grow yourself.</p><p>Turmeric enjoys the same growing conditions as ginger, which I described <a href="https://arealgreenlife.com/ginger-real-food-garden/" class="" style="outline: currentcolor none medium;">here</a>. The only difference is that turmeric is tougher. I've tried my darnedest to neglect my turmeric out of existence, and it just keeps popping up, year after year.</p><p>And when you eat the whole food, fresh from the soil at your place, you can bin all those other supplements, save yourself a packet, and enjoy all those fancy health benefits without having to sort through the bullet point lists of what they are. This is RealFood.&nbsp;</p><p>The most delicious way to enjoy fresh, whole turmeric that I know of is in a hot mug of turmeric milk, also called golden milk, of Ayurvedic origin. <br></p></div><div class="thrv_wrapper thrv_text_element tcb-tablet-hidden tcb-desktop-hidden"><p data-css="tve-u-63150a6e501e32" style="text-align: center;"><a class="tve-jump-scroll" href="#tve-jump-1830ae61187" style="outline: currentcolor none medium;">back to contents </a></p></div><div class="thrv_wrapper thrv_text_element"><h2 class="" id="t-1662324643347">Golden Milk Recipe <br></h2><p>Here's our basic recipe:</p><ul class=""><li>a few bits of turmeric root (enough to give 1 to 2 tablespoons when grated) fresh from the garden, washed under running water, towel dried, and grated (don't bother peeling)</li><li>(optional) a small bit of ginger root (about a teaspoon grated). You don't have to peel this, either. Note that if you use super fresh ginger, it may curdle your milk. Go for the ginger you dug up last week and haven't gotten around to preserving or replanting.</li><li>(optional) a pinch of pepper (Pepper famously has a compound in it that <em>may</em> help you better absorb the beneficial curcumin in the turmeric. Keep in mind that if you're eating an isolated compound from a food -- such as curcumin from turmeric--then you need all the help you can get to digest and make use of it. But if you're eating the whole food as we are here, there are countless co-factors included in it, all available to your body in the exact balance it needs -- so don't get too hung up on the &nbsp;pepper thing. Read more about all this, <a href="https://www.myvinyasapractice.com/the-benefits-of-golden-milk/" target="_blank" class="" style="outline: currentcolor none medium;">here</a>.)</li><li>a desert spoonful of coconut oil (optional -- I add this because I like the flavor, coconut oil has many health benefits, and turmeric may be better absorbed by your body in the presence of fat)</li><li>three cups of milk (whatever kind takes your fancy)</li><li>honey to taste</li></ul><p>Heat all the ingredients except the honey in a pan till barely simmering. Keep it there until you can't wait any longer, or for up to 5 minutes. Cool slightly, add honey to taste, and enjoy.</p><p>Serves 3. Or 2 if one of you likes this as much as my son does.</p><p>Makes a comforting and delicious bedtime beverage. (Go easy on the pepper if you tend toward poor sleep, as pepper is a stimulant.
